Soft, fluffy muffins with matcha and creamy white chocolate
These Matcha White Chocolate Muffins are soft, fluffy, and just sweet enough, with earthy matcha balanced by creamy white chocolate chunks. Inspired by the kind of easy, comforting recipe that feels right at home on Maniac Matcha Mama, they’re perfect for breakfast, an afternoon treat, or a grab-and-go snack.
Ingredients:
130 g granulated sugar
100 g butter, softened
200 g all-purpose flour
120 ml milk, room temperature
2 eggs, room temperature
1½ teaspoons baking powder
2 packets vanilla sugar
10 g matcha powder
A pinch of salt
100 g white chocolate
Preparation Steps:
1. Cream the Butter and Sugar:
Cream the softened butter with the granulated sugar and vanilla sugar until light and fluffy.
2. Add the Eggs:
Add the eggs one at a time, mixing well after each addition.
3. Mix the Dry Ingredients
In a separate bowl, sift together the flour, baking powder, matcha powder, and a pinch of salt.
4. Combine the Batter
Gradually add the dry ingredients to the butter mixture in two batches, alternating with the milk. Mix until the batter is smooth and uniform. It should be slightly thick but easy to spoon. Fold in the white chocolate pieces.
5. Bake the Muffins
Divide the batter evenly among muffin cups lined with paper liners. Bake in a preheated oven at 175°C using a convection setting for 20–25 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
Pro Tips
Let the muffins cool slightly before serving so the white chocolate stays soft and melty. They’re lovely on their own, but even better with a cup of matcha or coffee. For an extra finish, you can drizzle a little melted white chocolate on top or sprinkle a few extra chips before baking.
